Erik Bustillo is a Registered Dietitian. He attended Florida International University and earned the title of Registered Dietitian. Additionally, Erik is also a Certified Sports Nutritionist through the International Society of Sports Nutrition- ISSN, a Certified Strength Coach, and a Certified Personal Trainer through the National Strength and Conditioning Association - NSCA. He also specializes in reading and understanding blood/lab values that have a direct effect on the human physiology and one’s ability to perform. Several fields of expertise are energy improvement, performance recovery, weight loss, working with professional/elite athletes, stress management, inspirational communication.

Erik has experience in clinical research studies and extensive knowledge in medical nutrition therapy. He has contributed to the field of science by being a test subject in studies as well as by helping complete and conduct clinical research studies. Erik specializes in performance nutrition for athletes with his specialty being sports nutrition, supplementation and motivation; this makes him a diverse health professional.

Erik has studied the science of nutrition for many years because he understands that nutrition is an elemental factor with the state of well-being. His mission is to make this world a better place and he strives to accomplish this by helping others achieve their health and life goals. He believes that with hard work and determination, everyone is capable of accomplishing what they set their mind to. Erik is passionate about making his patients/clients push themselves harder and further than they ever imagined. Erik’s practical approach puts exercise and nutritional science into easy to follow steps for action.


Dr. Gabrielle Fundaro will host a 60 minute lecture along with a 30 minute Q&A covering...

-Common weight loss myths (hormones, detoxes, gut health, chemicals, fattening or fat loss foods)
-Problems with fad diets, weight loss challenges, and temporary resolutions
-Applied diet psychology for sustainable behavior change and new habits
-A spectrum of nutrition-specific practices for weight management before, during, and after the holidays

More about the speaker:

Dr. Gabrielle Fundaro, CISSN, CHC, is a Renaissance Periodization consultant, ISSN-certified sport nutritionist, and ACE-certified health coach with a Monash University Low-FODMAP Dietary certification. Dr. Fundaro combines her knowledge of nutrition and motivational interviewing techniques to promote intrinsic motivation and behavior change in clients to facilitate long-term weight management and healthy lifestyles. Her doctoral studies focused on the interactions between the gut microbiome and human metabolism, and she leverages this experience to aid clients in pursuing digestive health and comfort. She believes in the importance of a plant-centric diet in addition to regular, enjoyable physical activity and cognitive exercises as part of a sustainable lifestyle free from the chronic dieting mindset. She has taught a variety of courses related to nutrition for performance and health, physiology, and macronutrient metabolism. In addition to her teaching experience, she has enjoyed the opportunity to share evidence-based recommendations in seminars, podcasts, and contributions to magazines such as Shape and Oxygen. Dr. Fundaro is a former Assistant Professor of Exercise Science at Georgia Gwinnett College and holds a PhD in Human Nutrition, Foods, and Exercise from Virginia Tech as well as a BS in Exercise, Sport, and Health Education from Radford University. She is currently completing requirements towards the Registered Dietitian credential as a participant in the Individualized Supervised Practice Pathway of the Dietetic Internship Program of the University of Oklahoma Health Sciences Center. In her free time, she enjoys hiking, reading, spending time with her dogs, and training for powerlifting.
